90年の歴史を誇るうなぎ卸問屋の技と想いを受け継ぎ、「うなぎの魅力を世界へ発信する」という志を形にするため、伝統の職人技と現代的な感性を融合させた空間を構想しました。
舞台は感度の高い人々が集う青山。
この地にふさわしい新たな鰻店像を描き、店の核となるカウンターには、うなぎ漁の原点である「もんどり仕掛け」をモチーフとした造形を据えました。
竹を編み込むもんどりの有機的なフォルムを抽象化し、カウンターに再構築することで、伝統漁の美学を現代空間へと昇華。
さらに、エントランスには細長いうなぎや川の流れを思わせる格子を設け、光と影の繊細な表情と、カウンターの竹のラインと呼応するデザインが、空間に有機的なリズムをもたらしています。
色彩は竹の自然な風合いとうなぎの白身を基調に、タレを想起させる飴色のオレンジを差し色として用い、上質で温かみある雰囲気を演出しました。
使用木材には、日本の美意識を感じさせるタモ材を採用。
その穏やかな木目と落ち着いた存在感が料理の美しさを引き立て、空間に深みを添えています。
伝統と革新が調和する唯一無二の設えは、素材の美と文化を映し出し、ここでしか得られないモダンな体験を生み出します。
Building on the craftsmanship and spirit of a distinguished eel wholesaler with a 90-year history, we envisioned a space that embodies the mission of “sharing the allure of eel with the world.”
The design seeks to merge traditional artisanal techniques with contemporary sensibilities, befitting the refined atmosphere of Aoyama, a district known for its discerning audience.
At the heart of the restaurant, the counter is inspired by the traditional mondori fish trap, a symbol of the origins of eel fishing.
Its organic, woven bamboo form has been abstracted and reinterpreted into a sculptural counter, elevating the aesthetics of traditional fishing into a modern architectural expression.
At the entrance, lattice patterns reminiscent of elongated eels and flowing rivers introduce a delicate interplay of light and shadow, resonating with the bamboo lines of the counter to create a natural rhythm throughout the space.
The color palette highlights the natural texture of bamboo and the pristine white of eel, accented with a caramel orange that evokes the glaze of eel sauce, achieving a warm yet refined atmosphere.
Ash wood (tamo), chosen for its subtle grain and calming presence, further enhances the beauty of the cuisine while grounding the space in a distinctly Japanese sensibility.
This fusion of tradition and innovation results in a one-of-a-kind environment that reflects the beauty of materials and culture, offering a truly modern dining experience unlike any other.
